These days, it’s hard to appreciate just how risqué a book with offal as its subject was to publish fifteen years ago. It was the kind of book that people were pleased to see published, but less keen to want to buy, take home and cook from. When the chance came to reissue and update this classic book, we tried to make offal beautiful, but be true to Anissa’s wonderful recipes.
